Is there an adapter that will let me use the Canon AF lenses on the Pentax digital? It is ok if they have to be manual focus afterward, as I usually use it anyway. If not, is there a 2x converter for the Pentax? It says DA on the lens. thanks.
No.
It is always important to research this before spending any money.
For SLR's and DSLR's
Canon = Canon
Nikon = Nikon
Pentax = Pentax
Fujifilm = NIkon
Kodak = Nikon or Canon depending upon the model number
Olympus = Olympus
Kenko makes a MC7 2X AF TELE-CONVERTER F/PENTAX for just over $100
The Pentax 2x Teleconverter is about $550 and here is a link to more information.

This is the reason most photographers who have 35mm lenses that they love, switch to the same brand of DSLR. They want a compatible body that will fully function with their lens collection.
If you are serious about your Pentax K100D, then the best solution may be to sell off your Rebel 2000 and it's lenses. The money can help you replace them with current Pentax lenses and perhaps a used Pentax 35mm SLR, if you feel the need.
You have a basic problem as the Canon lens mount is larger than the Pentax mount. No adaptor will allow a larger lens to fit a smaller mount, unless you get an extension tube style and lose most of your focusing ability.
Sorry to bring you this news, but that's the reality of OEM incompatable lenses. You can fit Nikon lenses on Canon DSLRs and several different types on Olympus DSLRs with adaptors. But there's no adaptor for the KM mount body to accept other lenses other than the older thread mount lenses of long ago.
